  5. Turn off the heat before adding the butter, cream cheese, heavy cream, and Cajun Seasoning. Mash the potatoes thoroughly. After that, add the seasoning salt,  salt, and pepper, and continue mashing to blend everything.
  6. Cover the pan with its lid to keep the potatoes warm until serving. Mix garlic powder, paprika, black pepper, salt, and cayenne to create a seasoning blend. Your Cajun mashed potatoes are ready to serve.

2. Mughlai chaap

Recipe

  1. Begin by adding Soya Chaap to boiling water along with Salt, Red Chili Powder, Ginger Garlic Paste, Cardamoms, Cloves, and Sugar. Allow it to boil for a while.
  2. Once it has boiled, remove the excess water and let the chaap cool. Dry it using paper towels.
  3. For the gravy, take yogurt and add Cashew paste and milk. Whisk it together thoroughly.
  4. In a pan, add oil and let it heat up. Add Cashews and let them roast for a minute. Then, add chaap to the oil, red chili, and Bay leaf.
  5. Once they have fried well, remove them from the pan. For the tempering, add Ghee, Black Cardamom, Green Cardamom, Cloves, Black Pepper, Green chili, Ginger, Salt, Yogurt, and Cilantro. Mix everything properly until the ghee settles on the top.
  6. After it starts to boil, drain it nicely. In a pan, add the drained yogurt and fried chaap. Add some water, Black Pepper, Cardamom powder, and Vegenaise. Let it boil. Your Mughlai chaap is ready to serve.

3. Cauliflower tikka masala

Recipe:

  1. In a large mixing bowl, whisk together the yogurt, ginger-garlic paste, turmeric powder, red chili powder, garam masala, coriander powder, cumin powder, and salt. Mix well.
  2. Add the cauliflower florets to the bowl and coat them evenly with the marinade. Cover the bowl with cling wrap and let it marinate for at least 30 minutes.
  3. Bake the cauliflower for 20-25 minutes or until tender and lightly charred. Set aside.
  4. In a large pan, heat the oil over medium heat. Add the chopped onions and sauté until they turn translucent.
  5. Add the baked cauliflower florets to the pan and mix well, ensuring that the florets are coated well with the masala.
  6. Cook the cauliflower tikka masala for 5-7 minutes or until heated through.
  7. Garnish with chopped cilantro and serve hot with mint chutney.

4. Paneer pakora

Recipe:

  1. Combine the gram flour, red chili powder, cumin powder, coriander powder, garam masala, and salt in a mixing bowl. Mix well.
  2. Gradually add water to the bowl, whisking continuously until a smooth and thick batter is formed.
  3. Heat oil in a deep-frying pan over medium heat.
  4. Dip each paneer cube into the batter, evenly coating it on all sides.
  5. Gently drop the paneer cubes into the hot oil and fry until golden brown and crispy.
  6. Using a slotted spoon, remove the paneer pakoras from the oil and place them on a paper towel to absorb excess oil.
  7. Serve hot with your favorite chutney or sauce.

5. Samosa

Recipe:

  1. Combine the flour, oil, and salt in a mixing bowl. Mix well.
  2. Gradually add water to the bowl, kneading the dough until it is smooth and elastic.
  3. Cover the dough with a damp cloth and rest for 30 minutes.
  4. In a pan, heat oil over medium heat. Add cumin seeds, coriander seeds, and fennel seeds, and sauté for a minute.
  5. Add green peas, mashed potatoes, red chili powder, garam masala, and salt. Mix well and cook for 2-3 minutes. Set aside to cool.

  8. Fill each cone with the potato filling and seal the edges of the dough with water.
